Ingredients

  • 1 small orange, peeled and cut in pieces
  • 2 cups shredded raw sweet potatoes
  • 2 cups raw shredded carrots
  • 2 cups shredded Granny apples
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup matzo cake flour
  • 1/2 cup oil
  • 2/3 cup raisins

Instructions

  1. Combine all ingredients in a large mixing bowl.
  2. Pour the mixture into a greased 1 1/2-quart casserole dish.
  3. Cover the casserole with a lid or foil.
  4. Bake at 350°F for 40 minutes.
  5. Uncover and continue baking for an additional 20 to 30 minutes until cooked through and slightly browned on top.
