  • 1 lb. ziti
  • 1 (10 oz.) frozen spinach
  • 1 lb. mozzarella cheese, cubed

Instructions

  1. Cook onion and garlic in olive oil until soft.
  2. Add diced tomatoes, crushed red peppers, salt, and pepper; simmer for 15 minutes.
  3. Cook pasta (ziti) until al dente and drain.
  4. Mix mozzarella cheese, cooked pasta, and spinach.
  5. Add 2/3 cup Parmesan cheese and toss well.
  6. Put the mixture into a casserole dish.
  7. Sprinkle with the remaining Parmesan cheese.
  8. Broil until the cheese is golden brown.
