Ingredients

  • 6 Tbsp. olive oil
  • 1 small yellow onion
  • 1 clove garlic
  • 1 (28 oz.) can crushed tomatoes
  • 1 (15 oz.) can cannelini beans
  • 2 c. cooked ditalini noodles
  • 2 to 3 basil leaves
  • 1 Tbsp. chopped parsley
  • salt and pepper

Instructions

  1. Heat olive oil in a large pot and brown the chopped onion and minced garlic.
  2. Remove the onion and garlic from the oil.
  3. Add crushed tomatoes to the pot.
  4. Stir in basil leaves, chopped parsley, salt, and pepper. Cook over low heat for 30 minutes.
  5. Add drained cannelini beans and heat until warmed through.
  6. Just before serving, add cooked ditalini noodles and mix well.
