  • 1 medium onion
  • 1 teaspoon oregano or parsley
  • garlic salt to taste
  • pepper to taste
  • 3 cans Great Northern beans with juice
  • 1 can tomato sauce
  • 1/2 can water

Instructions

  1. In a large pan, add water, shaved carrots, chopped celery, diced onion, oregano or parsley, garlic salt, and pepper.
  2. Cover and simmer for about 1 hour.
  3. While this simmers, cook pasta according to package instructions and drain.

  5. Add cooked pasta to the soup and stir gently.
  6. Cook for an additional 30 minutes to allow flavors to blend.

Tips & Substitutions

For added depth, consider sautéing the onion, garlic, and carrots in olive oil before adding them to the pot. You can substitute Great Northern beans with cannellini or navy beans if preferred. Fresh herbs like thyme or basil can also enhance the flavor. Adjust the garlic salt and pepper according to your taste for a personalized kick.

Serving Suggestions

Serve the Pasta Fagioli hot, garnished with freshly chopped parsley or grated Parmesan cheese. It pairs beautifully with crusty bread or a side salad for a complete meal. Consider serving with Biscotti (Christmas Gifts) for a sweet finish or a light Italian Pea Soup as a starter.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 4 days. The soup can thicken upon cooling; to reheat, add a splash of vegetable broth or water to reach desired consistency. Reheat on the stovetop over medium heat, stirring occasionally until warmed through.

Can I make this dish gluten-free?

Yes, simply substitute regular pasta with gluten-free pasta. Be sure to adjust the cooking time as gluten-free pasta may cook differently. This way, you can still enjoy a hearty and comforting meal without gluten.

How can I make this recipe spicier?

To add some heat, consider incorporating red pepper flakes or a splash of hot sauce when simmering the soup. You can also serve it with a side of spicy olive oil to drizzle on top before serving.

Is this dish suitable for meal prep?

Absolutely! Pasta Fagioli is great for meal prep as it stores well and flavors improve over time. Just remember to cook the pasta separately and add it when reheating to prevent it from becoming mushy.
