Ingredients

  • 1/2 c. milk
  • 1/3 c. sugar
  • 1/4 c. vinegar
  • 1 egg
  • 4 Tbsp. butter or margarine
  • 1 Tbsp. cornstarch
  • 3/4 tsp. salt
  • 3/4 tsp. celery seed
  • 1/4 tsp. dry mustard
  • 1/4 c. chopped onion
  • 1/4 c. mayonnaise
  • 7 medium potatoes, cooked in jackets, peeled, diced and chilled
  • 3 hard-cooked eggs, chopped

Instructions

  1. In a medium saucepan, combine milk, sugar, vinegar, 1 egg, butter, cornstarch, salt, celery seed, and dry mustard.
  2. Cook and stir over low heat until thickened.
  3. Remove from heat; blend in chopped onion and mayonnaise.
  4. Cool the dressing.
  5. Combine cooked, peeled, diced potatoes and chopped hard-cooked eggs in a large bowl.
  6. Carefully fold in the cooled dressing until evenly coated.
  7. Chill the potato salad.
  8. Just before serving, sprinkle with paprika.
