Ingredients

  • 2 cups sugar
  • 4 eggs
  • 3 cups grated zucchini
  • 1 cup salad oil
  • 1 1/2 cups shredded coconut
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/4 cups chopped nuts

Instructions

  1. Cream eggs and sugar together.
  2. Add oil and mix in grated zucchini.
  3. Add flour, baking soda, salt, and cinnamon, mixing well.
  4. Stir in shredded coconut and chopped nuts.
  5. Grease two 9x13 inch pans.
  6. Divide the dough evenly between the two pans.
  7. Bake at 350°F for 25 minutes or until tested done.
  8. Frost with cream cheese frosting after cooling.
