Ingredients

  • 20 Ritz crackers, crumbled
  • 3 egg whites
  • 1/2 tsp baking powder
  • 1 cup sugar
  • 1 cup chopped pecans
  • whipped cream

Instructions

  1. Beat egg whites until stiff.
  2. Add baking powder and sugar to the egg whites and continue beating.
  3. Fold in chopped pecans and crumbled Ritz crackers.
  4. Pour mixture into a greased pie pan.
  5. Bake at 325°F (163°C) for 20 to 30 minutes until set and lightly browned.
  6. Remove from oven and let cool.
  7. Top with whipped cream or Cool Whip before serving.
