Ingredients

  • 2 qt. water
  • 2 c. green split peas
  • 1 stalk celery
  • 1 large carrot
  • 1 small onion
  • 1/4 tsp. ground dried thyme
  • 1 bay leaf
  • dash of cayenne
  • salt and pepper to taste

Instructions

  1. In a large pot, combine water, green split peas, chopped celery, peeled and chopped carrot, chopped onion, ground dried thyme, bay leaf, and a dash of cayenne.
  2. Bring to a boil and cook hard for 20 minutes.
  3. Reduce heat and simmer for 45 minutes or until peas are tender.
  4. Strain the soup through a fine sieve.
  5. Reheat the strained soup.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Serve hot with warm bread, if desired.
