- In a large pot, combine water, green split peas, chopped celery, peeled and chopped carrot, chopped onion, ground dried thyme, bay leaf, and a dash of cayenne.
- Bring to a boil and cook hard for 20 minutes.
- Reduce heat and simmer for 45 minutes or until peas are tender.
- Strain the soup through a fine sieve.
- Reheat the strained soup.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve hot with warm bread, if desired.
