A tangy, sweet relish with fresh cucumbers, peppers, onions, and celery, perfect for adding zest to hot dogs, burgers, or as a condiment for various dishes.

Ingredients

  • 4 cups cucumbers
  • 1 cup green pepper
  • 1/2 cup red pepper
  • 3 cups red onion
  • 3 cups celery
  • 3 1/2 cups sugar
  • 2 cups white vinegar

Instructions

  1. Combine sugar, vinegar, mustard seed, and celery seed in a pot.
  2. Bring to a boil and stir until sugar dissolves.
  3. Stir in cucumbers, green pepper, red pepper, red onion, and celery.
  4. Simmer the mixture for 10 minutes.
  5. Put the hot relish into jars and process in a hot water bath for 10 minutes.
