Peach Glazed Corned Beef

- Place the corned beef in a heavy saucepan or Dutch oven.
- Add water to cover the meat.
- Add the bay leaf, cover, and simmer for 2 1/2 to 3 hours, or until the meat is tender.
- Remove from heat and cool the meat in the cooking liquid.
- Remove the meat and slice it across the grain.
- Arrange the slices, overlapping, in a 12 x 7 1/2 x 2-inch baking dish.
- Drain the peach halves, reserving 1/4 cup of syrup.
- Arrange the peach halves around the meat in the dish.
- Combine the reserved syrup with the remaining ingredients: prepared mustard, brown sugar, catsup, and vinegar.
- Pour the glaze mixture over the meat and peaches.
- Bake at 350°F for 1 hour, basting occasionally.
