Peach Glazed Corned Beef

Ingredients

  • 3 lb. piece corned beef
  • 1 bay leaf
  • 2 tsp. prepared mustard
  • 1/4 c. brown sugar
  • 1 (13 oz.) can peach halves
  • 1/4 c. catsup
  • 2 Tbsp. vinegar

Instructions

  1. Place the corned beef in a heavy saucepan or Dutch oven.
  2. Add water to cover the meat.
  3. Add the bay leaf, cover, and simmer for 2 1/2 to 3 hours, or until the meat is tender.
  4. Remove from heat and cool the meat in the cooking liquid.
  5. Remove the meat and slice it across the grain.
  6. Arrange the slices, overlapping, in a 12 x 7 1/2 x 2-inch baking dish.
  7. Drain the peach halves, reserving 1/4 cup of syrup.
  8. Arrange the peach halves around the meat in the dish.
  9. Combine the reserved syrup with the remaining ingredients: prepared mustard, brown sugar, catsup, and vinegar.
  10. Pour the glaze mixture over the meat and peaches.
  11. Bake at 350°F for 1 hour, basting occasionally.
