Peach Melba Dessert combines tender peach halves with pureed berries, vanilla ice cream, and toasted almonds for a delightful and elegant treat perfect for summer gatherings.

Ingredients

  • 8 canned peach halves
  • 1 pint fresh strawberries or raspberries or frozen berries, thawed
  • 2 Tbsp powdered sugar
  • 1/2 Tbsp water
  • 2 Tbsp sliced almonds
  • 4 scoops vanilla ice cream

Instructions

  1. Drain peach halves well and rinse strawberries or raspberries thoroughly.
  2. In a food processor or blender, combine berries, powdered sugar, and water.
  3. Puree until the mixture is thickened.
  4. Toast sliced almonds in a hot skillet until lightly browned.
  5. Arrange peach halves on serving plates and add one scoop of vanilla ice cream to each plate.
  6. Glaze the peach halves with the pureed berries.
  7. Sprinkle the toasted almonds over the dessert.
  8. Serve with macaroons or wafers if desired.
