- Cut the ribs into serving-size pieces and place in a large pot.
- Cover with water and bring to a boil.
- Reduce heat and simmer until tender, about 40 to 50 minutes.
- Drain the ribs.
- Place the meat in a shallow baking pan.
- Combine the strained peaches, catsup, vinegar, soy sauce, brown sugar, minced garlic, and ground ginger to make the marinade.
- Pour the marinade over the meat and let marinate in the refrigerator overnight.
- Drain the ribs well, reserving the marinade.
- Grill the ribs over hot coals for 40 to 50 minutes, depending on thickness.
- Baste with the reserved marinade frequently during cooking.
