Ingredients

  • 3/4 cup sugar
  • 5 teaspoons cornstarch
  • 1 1/2 cups cold water
  • 1 - 3 oz. package peach gelatin
  • 2 cups unsweetened frozen sliced peaches
  • 1 - 3 oz. package cream cheese softened
  • 3 tablespoons confectioners sugar
  • 1 tablespoon milk
  • 1 1/2 cups whipped topping
  • 1 - 9 oz. graham cracker crust

Instructions

  1. In a large saucepan, combine sugar and cornstarch.
  2. Stir in water until smooth.
  3. Bring to a boil and cook, stirring for 1-2 minutes or until thickened.
  4. Remove from heat and whisk in gelatin until completely dissolved.
  5. Add sliced peaches and refrigerate approximately 20 minutes until slightly thickened.
  6. Spread the mixture into the graham cracker crust.
  7. In a small bowl, mix softened cream cheese, confectioners sugar, and milk until smooth.
  8. Fold whipped topping into the cream cheese mixture.
  9. Spread the whipped topping mixture over the peach filling.
  10. Refrigerate until ready to serve.
