Ingredients

  • 1 quart rich chicken stock
  • 3 ounces minced onions
  • 3 ounces minced celery
  • 8 ounces peanut butter
  • 3 ounces butter
  • 1 tablespoon flour
  • 1 cup half and half
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Boil chicken stock, minced onions, and minced celery together for 45 to 60 minutes.
  2. Strain out the onion and celery and discard them.
  3. Stir in peanut butter until dissolved.
  4. Mix flour with half and half, then add to the soup along with remaining ingredients.
  5. Simmer all together for 15 minutes.
  6. Add a dash of egg shade for coloring.
  7. Garnish with 1/2 teaspoon bacon crumbs or minced country ham.
