Ingredients

  • 1/2 cup all-vegetable shortening
  • 3/4 cup creamy peanut butter
  • 1 1/4 cups firmly packed light brown sugar
  • 3 tablespoons milk
  • 1 tablespoon vanilla
  • 1 egg
  • 1 3/4 cups all-purpose flour
  • 3/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1/2 cup strawberry jam

Instructions

  1. Heat oven to 375°F (190°C).
  2. Combine shortening, peanut butter, brown sugar, milk, and vanilla in a large bowl.
  3. Beat at medium speed with an electric mixer until well blended.
  4. Add the egg and beat just until blended.
  5. Combine flour, salt, and baking soda in a separate bowl.
  6. Add the dry ingredients to the creamed mixture at low speed.
  7. Mix just until blended.
  8. Shape the dough into 1-inch balls and place on an ungreased baking sheet.
  9. Make an indentation in the center of each ball with your thumb or the back of a spoon.
  10. Fill each indentation with strawberry jam.
  11. Bake for 10 minutes or until lightly browned.
