Ingredients

  • 2 eggs
  • 2 c. pumpkin
  • 1/4 c. corn syrup
  • 1/2 c. brown sugar
  • 1 tsp. vanilla
  • 1 tsp. nutmeg
  • 1/2 c. pecan halves
  • 1 unbaked pie shell

Instructions

  1. Preheat oven to 375°F.
  2. Beat eggs in a bowl, then add pumpkin, corn syrup, brown sugar, vanilla, and nutmeg; mix well.
  3. Pour the mixture into the unbaked pie shell.
  4. Top the filling with pecan halves.
  5. Bake for 40 to 50 minutes until set.
  6. Allow to cool slightly before serving. Optional: add whipped topping.
