Ingredients

  • 10 cups cornflakes
  • 2 cups salted Spanish peanuts
  • 1 cup light corn syrup
  • 1/2 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 tablespoons water
  • 1 cup chunky peanut butter
  • 2 tablespoons butter
  • 1 cup chocolate bits
  • 1 tablespoon shortening

Instructions

  1. Combine cornflakes and salted peanuts in a large lightly buttered heat-proof mixing bowl.
  2. Place in a slow oven (250°F) for 5 to 8 minutes.
  3. Mix together the light corn syrup, brown sugar, and granulated sugar with 2 tablespoons of water.
  4. Place over medium heat and bring to a full boil.
  5. Remove from heat and stir in the chunky peanut butter and butter.
  6. Place over low heat until the mixture comes to a gentle boil to the center of the pan, stirring constantly.
  7. Pour the hot mixture over the warmed cornflakes and nuts in the bowl.
  8. Mix well to coat evenly.
  9. Pour the mixture into a buttered 9 x 13-inch pan and press down firmly.
  10. Melt the chocolate bits and shortening over hot water in a double boiler.
  11. Cool slightly and spread the melted chocolate over the cereal mixture.
  12. Cool in the fridge until the chocolate is set.
