Ingredients

  • 1 egg
  • 3/4 cup brown sugar
  • 1 1/4 cups unsifted flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup oil
  • 2 teaspoons vanilla extract
  • 1 cup chopped peanuts

Instructions

  1. Beat the egg in a mixing bowl.
  2. Blend in brown sugar.
  3. Combine flour, baking soda, and salt in a separate bowl.
  4. Gradually blend the flour mixture into the egg mixture with oil.
  5. Stir in vanilla extract and chopped peanuts.
  6. Drop teaspoons of batter onto a lightly oiled or greased baking pan.
  7. Bake at 375°F for 8 to 10 minutes until done.
