Ingredients

  • 3/4 cup soft shortening
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 3/4 cup peanuts, chopped fine
  • Powdered sugar, sifted (amount as needed for rolling)
  • 1/2 cup peanut butter
  • 1/2 cup powdered sugar

Instructions

  1. Cream shortening with peanut butter and salt until light and fluffy.
  2. Gradually add powdered sugar and blend well.
  3. Stir in vanilla, then add flour and mix.
  4. Fold in chopped peanuts until well combined.
  5. Shape mixture into small balls.
  6. Place on an ungreased cookie sheet.
  7. Bake for 12 minutes at 350°F or until golden brown.
  8. Immediately roll the hot cookies in sifted powdered sugar.
  9. Allow cookies to cool, then roll again in powdered sugar.
