Ingredients

  • 1 c. butter, softened
  • 2 c. sugar
  • 5 eggs, separated
  • 1 tsp. baking soda
  • 1 c. buttermilk
  • 3 c. all-purpose flour
  • 1 tsp. ground cinnamon
  • 1 tsp. ground allspice
  • 1 tsp. ground nutmeg
  • 1 c. chopped pecans
  • 1 c. pear preserves

Instructions

  1. Cream the softened butter in a large mixing bowl.
  2. Gradually add sugar, beating until light and fluffy.
  3. Add egg yolks and beat well.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground allspice, and ground nutmeg.
  5. Alternately add the dry ingredients and buttermilk to the creamed mixture, beginning and ending with the dry ingredients, mixing after each addition.
  6. In a clean bowl, beat egg whites until stiff peaks form.
  7. Gently fold the egg whites into the batter.
  8. Fold in chopped pecans and pear preserves.
  9. Pour the batter into a greased and floured cake pan.
  10. Bake at 350°F (175°C) for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool before removing from the pan and serving.
