Ingredients

  • 1 cup sugar
  • 1/2 stick butter or oleo
  • 2 eggs, beaten
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla
  • 1/2 cup chopped pecans
  • 1/2 cup angel flake or fresh frozen coconut
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat oven and prepare a pie crust.
  2. In a saucepan, melt butter and stir in sugar until combined.
  3. Remove from heat and mix in beaten eggs, vinegar, and vanilla.
  4. Add chopped pecans and coconut (and raisins if using) to the mixture.
  5. Pour the filling into the prepared pie crust.
  6. Bake in the oven at 350°F (175°C) for about 20 minutes, or until set and golden.
  7. Allow to cool before serving.
