Ingredients

  • 8 oz. cream cheese, softened
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1 large egg
  • 1 1/4 cups chopped pecans
  • 3 large eggs
  • 1 cup light corn syrup
  • 1 tsp. vanilla

Instructions

  1. Preheat oven to 350°F.
  2. In a medium bowl, blend softened cream cheese, sugar, 1 teaspoon vanilla, and 1 large egg until smooth.
  3. Pour the mixture into a pie shell.
  4. Sprinkle chopped pecans over the filling.
  5. In another bowl, blend 3 large eggs, light corn syrup, 1 teaspoon vanilla, and sugar until smooth.
  6. Gently pour the syrup mixture over the pecans in the pie.
  7. Bake on the center rack for 50 to 60 minutes, until the center is just set and the pastry is golden brown.
  8. Cool on a wire rack before serving.
