Pecan Chicken Breasts

Ingredients

  • 6 Tbsp. unsalted butter
  • 1/2 cup plus 2 Tbsp. Dijon mustard divided
  • 2 cups pecan halves
  • 4 whole chicken breasts skinned and boned
  • Pepper to taste
  • 1-1/2 to 2 cups plain yogurt
  • 1 cup pitted ripe black olives sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Melt butter in a small saucepan over low heat; remove from heat.
  3. Whisk in 1/4 cup Dijon mustard into the melted butter.
  4. Process pecan halves in small batches with on/off pulses in a food processor until finely ground.
  5. Place ground pecans in a shallow dish; set aside.
  6. Split the chicken breasts, skinned and boned, into halves if not already split.
  7. Season chicken breasts with pepper to taste.
  8. Brush chicken with a mixture of 2 tablespoons of Dijon mustard and some of the prepared Dijon-mustard butter.
  9. Dip each chicken breast into the ground pecans, pressing to coat evenly.
  10. Arrange coated chicken breasts in a baking dish.
  11. Bake in the preheated oven for about 20 minutes or until the chicken is cooked through.
  12. Serve with plain yogurt and sliced black olives on the side.
