Ingredients

  • 3 egg whites
  • 1 cup sugar
  • 1 cup pecans
  • 1/2 pint whipping cream
  • 1/2 teaspoon cream of tartar
  • 20 Ritz crackers
  • 1 teaspoon vanilla
  • 5 tablespoons pineapple preserves

Instructions

  1. Beat egg whites with cream of tartar until soft peaks form.
  2. Gradually add sugar and continue beating until stiff peaks are achieved.
  3. Finely crush Ritz crackers and fold into the egg whites along with chopped pecans and vanilla extract.
  4. Pour the mixture into a buttered pie pan and bake at 350°F for 35 to 40 minutes until golden.
  5. Remove from oven and allow to cool completely.
  6. Whip the cream until soft peaks form.
  7. Fold in pineapple preserves into the whipped cream.
  8. Spread the whipped cream and pineapple mixture over the cooled pie shell before serving.
