Ingredients

  • 1 egg white
  • 3/4 cup brown sugar
  • 1 tablespoon vanilla
  • 2 to 3 cups pecans

Instructions

  1. Beat the egg white until very stiff.
  2. Add vanilla and brown sugar; mix well.
  3. Add pecans and coat them well with the mixture.
  4. Drop small spoonfuls onto a baking sheet.
  5. Bake at 200°F (93°C) for 25 minutes.
  6. Turn off the oven.
  7. Do not remove the cookies until the oven is very cool.
