Pecan Potatoes

Sweet and nutty baked sweet potatoes topped with pecans and brown sugar, perfect as a comforting side dish for holiday dinners or family gatherings.

Ingredients

  • 4 large sweet potatoes
  • 1 tsp nutmeg
  • 1 stick oleo
  • 1 cup dark brown sugar
  • 1 cup chopped pecans

Instructions

  1. In a saucepan, put whole sweet potatoes and water to cover and cook until done.
  2. Remove potatoes and, when cool enough, peel them and mash well, creaming in nutmeg.
  3. Spoon the mashed potatoes into a baking dish.
  4. In a skillet, melt the oleo; add brown sugar and chopped pecans and cook until sugar is dissolved.
  5. Pour the pecan mixture over the mashed sweet potatoes.
  6. Bake at 350°F for 30 minutes.
