Tips & Substitutions

For added flavor, consider substituting apple cider vinegar for the white vinegar. You can also use fresh vegetables if you have them on hand, like fresh corn instead of canned. If you prefer a little heat, add some diced jalapeños or a sprinkle of red pepper flakes. This salad can easily be made vegan by ensuring all canned ingredients are plant-based.

Serving Suggestions

Serve this salad as a refreshing side dish for barbecues or picnics, pairing beautifully with grilled meats or sandwiches. It also makes a great topping for a bed of greens, akin to the Honey-Mustard Dressing(Serve Over Raw Spinach). For an added crunch, try serving with tortilla chips or alongside a fresh fruit salad.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will continue to meld, enhancing the taste. If the salad appears dry after chilling, stir in a little extra cooking oil or vinegar before serving. Avoid freezing, as the texture of the vegetables may change.
