Ingredients

  • 1 cup sugar
  • 1 1/2 teaspoons pumpkin pie spice
  • 2 eggs
  • 1 (16 oz.) can pumpkin (2 cups)
  • 1 (12 oz.) can evaporated milk
  • 1 package yellow or white cake mix
  • 1/2 cup butter or margarine, melted
  • Whipped cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine sugar, pumpkin pie spice, eggs, sugar, pumpkin, and evaporated milk in a bowl.
  3. Blend well until smooth.
  4. Pour the mixture into an ungreased 13 x 9-inch baking dish.
  5. Sprinkle the dry cake mix evenly over the pumpkin mixture.
  6. Drizzle the melted butter over the cake mix.
  7. Top with chopped nuts, such as pecans.
  8. Bake at 350°F (175°C) for 50 minutes, until golden brown.
  9. Refrigerate until chilled before serving.
  10. Serve with whipped cream.
