Ingredients

  • 1/3 cup cornmeal
  • 3 cups scalded milk
  • 1/2 cup molasses
  • 1/4 cup brown sugar
  • 1 heaping tablespoon butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon cloves
  • 1/8 teaspoon allspice
  • 1/8 teaspoon nutmeg
  • 2 eggs
  • 1 cup cold milk

Instructions

  1. Add cornmeal to scalded milk and simmer for 20 minutes, stirring often.
  2. Mix in the molasses, brown sugar, butter, salt, ginger, cinnamon, cloves, allspice, and nutmeg.
  3. Let the pudding cool, then add beaten eggs and the last cup of cold milk, mixing well before serving.
