Peking Pot Roast is a tender, flavorful beef dish with garlic, onion, coffee, and vinegar, slow-cooked to perfection—ideal for comforting family dinners or special gatherings.

Ingredients

  • 3 to 5 lb. roast beef
  • garlic
  • onion
  • 1 c. vinegar
  • cooking oil
  • 2 c. strong coffee
  • 2 c. water

Instructions

  1. Cut slits all over the roast.
  2. Insert slices of garlic and onion into the slits.
  3. Place beef in a bowl and pour vinegar over it, ensuring it runs into the slits.
  4. Refrigerate the beef for 24 to 48 hours.
  5. Discard the vinegar when ready to cook.
  6. Place the meat in a heavy pot and brown in cooking oil until almost burned on all sides.
  7. Pour coffee over the roast. Add water and cover.
  8. Cook slowly at a simmer for 6 hours on the stove.
  9. Twenty minutes before removing from heat, add salt and pepper.
  10. The meat will fall apart and is ready to serve.
