Ingredients

  • 3 to 5 lb beef roast
  • onion, thin slices
  • garlic, thin slices
  • 1 cup vinegar
  • water
  • 2 cups strong black coffee
  • salt to taste
  • salt to taste

Instructions

  1. Cut slits into the beef roast.
  2. Insert onion and garlic slices into the slits.
  3. Place the meat in a bowl and slowly pour vinegar over it.
  4. Add enough water to cover the meat.
  5. Cover with plastic wrap and refrigerate for 24 to 48 hours.
  6. Pour off the vinegar and place the meat in a large heavy pot.
  7. Brown the meat in oil until very dark on both sides.
  8. Pour coffee and 2 cups of water over the meat and cover with a lid.
  9. Cook, adding a little water if needed, until tender, about 2 hours.
  10. Add salt 20 minutes before serving.
