Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1/2 cup butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 3/4 cup light molasses

Instructions

  1. Sift together flour, baking soda, salt, ginger, cinnamon, and cloves onto waxed paper.
  2. In a large bowl of electric mixer, beat the softened butter, granulated sugar, and egg at high speed until light and fluffy.
  3. Add molasses and lemon peel; beat until well blended.
  4. With a wooden spoon, stir in the flour mixture; mix with hands until well blended and smooth.
  5. Divide the dough into 4 parts.
  6. Wrap each part separately and refrigerate overnight.
