Ingredients

  • 1 1/2 lb. cake flour
  • 1 lb. honey
  • 1/2 lb. sugar
  • 1/4 lb. brown sugar
  • 3 eggs
  • 1 lb. orange peel, chopped
  • 1 c. chopped pecans
  • 1/2 lb. all-purpose flour
  • 1 tsp. ground cloves
  • 2 tsp. allspice
  • 2 tsp. cinnamon
  • 1 Tbsp. baking soda
  • 1/2 lb. citron, chopped fine
  • 1/4 lb. lemon peel, chopped
  • 1 tsp. baking powder
  • Grated rind of 1 lemon
  • 1/2 c. brandy

Instructions

  1. Mix together the honey with 1/4 pound sugar. Boil, skim, and cool.
  2. Sift the cake flour and set aside.
  3. In a separate pan, combine the brown sugar, white sugar, eggs, spices (ground cloves, allspice, cinnamon), and dissolve the baking soda in the brandy.
  4. Add the citron, orange peel, lemon peel, grated lemon rind, and baking powder to the mixture.
  5. Mix the nuts with the all-purpose flour and add to the batter.
