Ingredients

  • 1 1/2 c. white vinegar
  • 1 medium red or green sweet pepper, cut in wedges
  • 2/3 c. Habanero or jalapeno peppers, chopped
  • 6 c. sugar

Instructions

  1. Place the vinegar, sweet pepper wedges, and chopped hot peppers in a blender and blend well.
  2. Add 2 cups of sugar to the blender and blend again.
  3. Pour the blended mixture into a saucepan.
  4. Stir in 4 more cups of sugar and bring the mixture to a boil.
  5. Strain the mixture and return it to the saucepan.
  6. Stir in the fruit pectin and food coloring.
  7. Bring to a full rolling boil over high heat, stirring constantly.
  8. Boil for 2 minutes.
  9. Remove from heat and skim off foam.
  10. Fill sterilized jars with the hot jelly.
  11. Process jars in a boiling water bath for 5 minutes.
