Ingredients

  • 1/2 cup butter
  • 1/3 cup green onion, chopped
  • 1/3 cup red bell pepper, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 2/3 cup sour cream
  • 2 eggs
  • 1 1/2 cups flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt

Instructions

  1. Preheat oven to 400°F.
  2. Grease muffin cups.
  3. Melt butter in a skillet with green onion and peppers; cook until tender about 7 minutes, stirring often.
  4. Cool to lukewarm.
  5. Whisk sour cream and eggs in a medium bowl.
  6. Stir in cooled onion mixture.
  7. Combine flour, sugar, baking powder, salt, and baking soda in a large bowl.
  8. Make a well in the center of the dry ingredients.
  9. Add the sour cream mixture to the well, stirring just until blended.
  10. Fill muffin cups three-quarters full.
  11. Bake at 400°F for 20 to 25 minutes.
