  1. Heat peanut oil in a Dutch oven.
  2. Add the beef chuck roast and brown well on all sides.

  4. Return the meat to the Dutch oven; add green pepper strips, canned tomatoes, tomato sauce, chopped celery with leaves, bay leaves, salt, thyme, and pepper.
  5. Bring the mixture to a boil.
