A cool, creamy peppermint ice cream cake layered with crunchy cereal, chocolate, and peppermint candies, perfect for holiday gatherings or festive celebrations with a minty delight.

Ingredients

  • 4 cups crisp rice cereal
  • 1 milk chocolate candy bar (7 oz.)
  • 1/2 cup butter or margarine
  • 1/2 gallon peppermint ice cream (softened)
  • 2 cups whipped topping
  • Peppermint candy canes or crushed peppermint candy

Instructions

  1. Place cereal in a large bowl.
  2. Grate or shave 2 tablespoons of chocolate from the candy bar; set aside.
  3. In a heavy saucepan, melt butter and remaining chocolate.
  4. Pour the melted mixture over the cereal and stir to coat evenly.
  5. Press the cereal mixture into the bottom of a greased 10-inch springform pan. Freeze for 30 minutes.
  6. Spoon peppermint ice cream over the crust.
  7. Freeze for 15 minutes.
  8. Spread whipped topping over the ice cream layer.
  9. Sprinkle with shaved chocolate.
  10. Cover and freeze the cake for several hours or overnight.
  11. Top with peppermint candies or crushed peppermint candy before serving.
  12. Remove the cake from the freezer 5 to 10 minutes before serving.
  13. Remove sides of the springform pan, cut with a sharp knife, and serve immediately.
