Peppermint Icebox Dessert

A creamy, minty icebox dessert with crunchy vanilla wafers and pecans, perfect for a cool treat at gatherings or family dinners with refreshing peppermint flavor.

Ingredients

  • 2/3 lb. vanilla wafers
  • 3 Tbsp. margarine
  • 1 1/2 pt. whipping cream
  • 1/2 lb. marshmallows
  • 3/4 c. chopped pecans
  • 8 sticks peppermint candy

Instructions

  1. Roll vanilla wafers until fine crumbs.
  2. Mix the crushed wafers with softened margarine.
  3. Press half of the mixture into a 9 x 13-inch pan and pat down firmly.
  4. Whip the whipping cream until stiff.
  5. Add marshmallows (cut into small pieces if large), and fold into whipped cream.
  6. Add chopped pecans and crushed peppermint candies, stirring until thoroughly mixed.
  7. Spread the mixture over the vanilla wafer crumbs in the pan.
  8. Cover with remaining wafer crumb mixture.
  9. Chill thoroughly or overnight before serving.
