Ingredients

  • 3/4 cup all-purpose flour
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1 (3 lb.) broiler-fryer, cut up

Instructions

  1. In a paper bag, combine the flour, salt, paprika, and pepper.
  2. Add a few chicken pieces at a time and shake to coat.
  3. Remove the chicken to a plate and let the coating dry.
  4. In a skillet, heat 1/2-inch of oil.
  5. Lightly brown the meaty sides of the chicken first.
  6. Lightly brown the other side.
  7. Reduce the heat and cover the skillet.
  8. Simmer for 30 minutes.
  9. Uncover and cook for an additional 10 minutes.
