Ingredients

  • 3 c. persimmons, cut in chunks
  • 2 tsp. baking soda
  • 1/2 c. butter or margarine
  • 1 2/3 c. sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 1 tsp. lemon juice
  • 2 c. flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. cloves
  • 1/2 c. raisins
  • 1/2 c. chopped nuts

Instructions

  1. Heat oven to 350°.
  2. Mix together the persimmons and baking soda; set aside.
  3. Mix together the butter, sugar, vanilla, and lemon juice; set aside.
  4. Mix together the flour, salt, cinnamon, nutmeg, and cloves; set aside.
  5. Blend the butter mixture with the flour mixture. Add the persimmon mixture.
  6. Add raisins and nuts.
  7. Pour into 1 large loaf pan or 2 small loaf pans.
  8. Bake at 350° for 50 minutes for the large loaf or 30 minutes for the small loaves.
