Ingredients

  • 1 cup ripe persimmon pulp
  • 1 cup sugar
  • 1 1/2 Tbsp melted butter
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 1/2 cup milk
  • 1 tsp lemon juice
  • 1 tsp vanilla
  • 1 cup raisins
  • 1 cup walnuts chopped
  • 1/2 cup candied lemon peel

Instructions

  1. In a large bowl, combine persimmon pulp, sugar, and melted butter.
  2. Sift together the dry ingredients: flour, salt, and cinnamon, and add to the fruit mixture alternately with milk.
  3. Add the lemon juice and vanilla, mixing well.
  4. Stir in raisins, walnuts, and candied lemon peel if desired.
  5. Grease and flour a deep baking pan or a 1-pound coffee can.
  6. Pour the batter into the prepared pan.
  7. Place the pan into a shallow pan of hot water.
  8. Bake at 325°F (163°C) for 1 hour, or until a toothpick inserted in the center comes out clean.
