Pesto Salad

A vibrant pesto salad featuring fresh basil, garlic, Parmesan, Romano, and pine nuts blended into a rich sauce, tossed with cooked tortellini for a savory, satisfying meal.

Ingredients

  • 2 c. basil
  • 2 cloves garlic
  • 1/2 c. Parmesan, grated
  • 1/2 c. olive oil
  • 1 tsp. salt
  • 3 Tbsp. softened butter
  • 2 Tbsp. pine nuts
  • 2 Tbsp. Romano, grated
  • 2 pkg. tortellini

Instructions

  1. Gently take leaves off of basil stalks and tear into smaller pieces.
  2. Add basil, olive oil, pine nuts, garlic, and salt to a blender.
  3. Blend until relatively smooth.
  4. Add Parmesan, Romano, and softened butter and blend slightly.
  5. Pour the pesto over cooked tortellini and mix well.
