  • 2 lb. cream cheese, softened
  • 2 lb. unsalted sweet butter, softened

  1. In a food processor, blend basil leaves, garlic, and pine nuts until a paste is formed.
  2. While the processor is running, slowly add the olive oil.
  3. Add Parmesan cheese last and do not overblend.
  4. Remove from processor and set aside.
  5. In a KitchenAid or mixing bowl, beat softened butter and cream cheese until light and fluffy, about 5 minutes.
  6. Line a mold pan or empty 5-pound cottage cheese or sour cream container with Saran Wrap, allowing excess to overhang the sides.
  7. Carefully layer 1/3 of the butter and cheese mixture into the prepared mold.
  8. Spread 1/2 of the pesto over the layer.
  9. Repeat layering with remaining butter mixture and pesto until both are used.
  10. Cover and refrigerate overnight before serving.
