Ingredients

  • 1 large onion
  • 1/2 green pepper
  • 3 stalks celery
  • 1 carrot
  • 2 lb. red snapper fillets
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 2 Tbsp. olive oil
  • 1 (1 lb.) can tomatoes
  • 2 Tbsp. ketchup
  • 1/2 tsp. salt

Instructions

  1. Peel the onion and chop finely.
  2. Seed the green pepper and chop.
  3. Chop the celery and carrot.
  4. Place the fish fillets on a large plate.
  5. Sprinkle the fillets with lemon juice and salt.
  6. Let stand for 30 minutes.
  7. Place the fillets in a 9 x 13-inch bake pan, discarding excess lemon juice.
  8. Heat olive oil in a 10-inch frypan over medium heat.
  9. Saute the onion, green pepper, celery, and carrot for 5 minutes, stirring with a fork.
  10. Add the tomatoes, ketchup, salt, and pepper.
  11. Cover and simmer for 30 minutes.
  12. Pour the vegetable mixture over the fish fillets.
  13. Bake at 400°F for 35 minutes.
