- Fry the chopped onion until limp.
- Add ground turkey or beef, chopped celery, grated carrot, garlic salt, and soy sauce to the pan.
- Brown the mixture, then drain off excess grease.
- Add bean sprouts and mix well.
- Taste and adjust seasonings if desired.
- Spoon a small amount of filling onto each egg roll wrapper.
- Fold two opposite sides over the filling about 3/4 inch each.
- Roll up the wrapper according to the package illustration.
- Seal the edge with water by running your finger along the edge of the wrapper.
- Heat 1/2 inch of cooking oil in a frying pan over medium-high heat.
- Add 4 egg rolls and brown on both sides lightly.
- Repeat until all egg rolls are cooked.
- Drain on paper towels.
- Serve with duck sauce.
