Ingredients

  • 1 1/4 cups flour
  • 1/2 cup crushed pecans
  • 1 stick butter
  • 4 cups blueberries, divided
  • 1/2 cup water
  • 3/4 cup sugar
  • 3 tablespoons cornstarch

Instructions

  1. Mix flour and crushed pecans; add melted butter and mix thoroughly.
  2. Press the mixture into a pie plate and bake at 350°F for 20 minutes.
  3. Combine 1 cup of blueberries, water, and sugar in a saucepan.
  4. Bring to a boil and cook for 1 minute while full boiling.
  5. Mix cornstarch with 1/4 cup cold water to make a slurry.
  6. Add the cornstarch mixture to the boiling blueberries and cook until thickened.
  7. Add 3 cups of remaining blueberries and mix well.
  8. Pour the blueberry filling into the pre-baked crust and chill before serving.
