Phyllo Spinach Rolls

Delicious flaky phyllo rolls filled with cheesy spinach mixture, baked until golden and crispy—perfect for appetizers or a savory snack that appeals to cheese and vegetable lovers.

Ingredients

  • 1 lb. Muenster cheese
  • 2 eggs
  • 1 Tbsp. chopped parsley
  • 1 lb. frozen phyllo
  • 2 sticks melted butter
  • 1 package frozen chopped spinach

Instructions

  1. Grate the Muenster cheese.
  2. Add eggs, chopped parsley, and drained chopped spinach (if using). Blend well.
  3. Unroll the frozen phyllo dough.
  4. Slice the phyllo into thirds lengthwise (approximately 4x12 inches).
  5. Re-wrap 2/3 of the dough in plastic wrap and freeze for later use.
  6. On wax paper, take one sheet of phyllo and brush liberally with melted butter.
  7. Place 2 more sheets over it, brushing each layer with butter.
  8. Place 1 tablespoon of cheese mixture 1 inch from the edge of the layered sheets.
  9. With fingers, roll the dough over the mixture twice.
  10. Fold in the edges of the dough and continue rolling tightly to enclose the filling.
  11. Place the seam side down on a cookie sheet.
  12. Brush the tops of the rolls with melted butter.
  13. Bake at 400°F (200°C) for 15 minutes or until golden and crispy.
