Phyllo Spinach Rolls
Delicious flaky phyllo rolls filled with cheesy spinach mixture, baked until golden and crispy—perfect for appetizers or a savory snack that appeals to cheese and vegetable lovers.

- Grate the Muenster cheese.
- Add eggs, chopped parsley, and drained chopped spinach (if using). Blend well.
- Unroll the frozen phyllo dough.
- Slice the phyllo into thirds lengthwise (approximately 4x12 inches).
- Re-wrap 2/3 of the dough in plastic wrap and freeze for later use.
- On wax paper, take one sheet of phyllo and brush liberally with melted butter.
- Place 2 more sheets over it, brushing each layer with butter.
- Place 1 tablespoon of cheese mixture 1 inch from the edge of the layered sheets.
- With fingers, roll the dough over the mixture twice.
- Fold in the edges of the dough and continue rolling tightly to enclose the filling.
- Place the seam side down on a cookie sheet.
- Brush the tops of the rolls with melted butter.
- Bake at 400°F (200°C) for 15 minutes or until golden and crispy.
