Feta Salad Dressing

A vibrant and tangy feta salad dressing with roasted red pepper, garlic, shallot, and fresh parsley, perfect for brightening salads and grilled vegetables with Mediterranean flair.

Ingredients

  • 1 roasted red bell pepper
  • 1 clove garlic
  • 1 small shallot
  • 1 Tbsp. fresh parsley, minced
  • 1/4 c. crumbled Feta cheese
  • 1/4 c. balsamic vinegar
  • 1/4 c. unsweetened pineapple juice
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. olive oil

Instructions

  1. To roast the bell pepper, char it over an open flame until all sides are blackened, about 2 to 3 minutes.
  2. Place the roasted bell pepper in a bowl, cover, and let steam until cooled.
  3. Peel the bell pepper, cut off the top, and discard the seeds.
  4. Chop the roasted bell pepper to measure 1 tablespoon and reserve the remaining for other uses.
  5. In a blender or food processor, combine the roasted bell pepper, garlic, shallot, parsley, feta cheese, balsamic vinegar, pineapple juice, salt, and pepper.
  6. Blend until smooth.
  7. Slowly add the olive oil while blending until the dressing is emulsified.
  8. Adjust seasoning if needed and serve over salads or vegetables.
