Ingredients

  • 1 lb. ground beef
  • 1/2 medium onion
  • 1/4 green pepper
  • 1 Tbsp. garlic powder
  • 1 Tbsp. oregano
  • 2 bay leaves
  • 2 Tbsp. olive oil
  • 1 (6 oz.) can tomato sauce
  • 1/2 cup green olives
  • 6 or 7 potatoes
  • cooked rice

Instructions

  1. Brown ground beef with olive oil in a large skillet.
  2. Peel potatoes and cut into 1/4-inch cubes.
  3. Fry the potato cubes in deep fat until golden and cooked through.
  4. Drain the fried potatoes on paper towels.
  5. Add all the remaining ingredients, including onion, green pepper, garlic powder, oregano, bay leaves, tomato sauce, and green olives, to the cooked beef.
  6. Add the fried potatoes last and stir gently to combine.
  7. Serve the mixture over cooked rice.
