Ingredients

  • 1 fresh pork ham (whole, shoulder, or butt half - not smoked or cured)
  • vinegar
  • seasoned pepper

Instructions

  1. Trim the ham, leaving a small amount of fat for flavor during cooking.
  2. Remove all skin and brine from the ham.
  3. Rub the fresh ham thoroughly with vinegar.
  4. Press seasoned pepper onto the ham, ensuring it adheres well to the surface.
  5. Wrap the ham tightly in heavy-duty foil.
  6. Place in a roasting pan and bake at 200°F (93°C) overnight or for at least 10 hours.
  7. When unwrapped, the pork should fall apart or shred easily with a fork.
  8. Place on a large serving platter on a buffet table for guests to 'pick' at it.
  9. Serve with your favorite barbecue sauce.
  10. Save the juices from the ham and cook rice in it for enhanced flavor.
